Green Bean and Potato Salad

I tried this recipe on a whim one day, and it turned out excellent. Enjoy!

Here are some nutrition facts:

Fresh Green Beans: Green beans are an excellent source of vitamin C, vitamin K and manganese. Plus green beans are very good source of vitamin A (notably through their concentration of carotenoids including beta-carotene), dietary fiber, potassium, folate, and iron.

Red Potatoes:Potatoes are an excellent source of carbohydrates, the body’s best energy source. There are two types of carbohydrates: simple carbohydrates found in refined sugar, candy bars and most refined products to provide a quick burst of energy quickly as well as deplete energy quickly and complex carbohydrates (as in potatoes) release their energy slowly, keep the blood sugar level steadier and longer, the body’s best source of energy on a long term basis. Potatoes are high in fiber aiding the digestive system and they absorb water which makes one feel satisfied and less hungry. Potatoes are fat free, cholesterol free, sodium free and saturated fat free. They are high in Vitamin C and potassium and are a great source of Vitamin B6 and dietary fiber.

Ingredients:
1 small bag of red potatoes
1/2 lb. fresh green beans
1 clove garlic
2 tablespoons extra virgin olive oil
fresh ground black pepper

Prep:
Quarter potatoes and place in pot with water and bring to boil

While potatoes are boiling snap the tips off of the green beans and set aside

Mince garlic and set aside 

Cook potatoes until al dente, add clean green beans and continue boiling until green beans are cooked 

-strain potatoes and green beans
-heat oil in pan
-once hot add garlic to pan and saute
-add potatoes and green beans to garlic
-add seasonings

    Looks delicious.My Mom has made a version of this recipe for years.She adds light mayonnaise,sliced red onions,a bit of red wine vinegar and mix.Slices of hard boiled egg to place on top,a sprinkle of paprika on top for color and chill.So pretty,delicious and refreshing at a summer picnic.
