Balsamic Glazed Salmon

Cooked By: The Paraplegic Chef

To be completely honest I am not sure how I came about this recipe, but it is to die for. Every bite you take, you wish that that it lasted forever. It is super simple to make and quite worth the effort. Don’t pass this one up, you will be thanking me later ;)

Ingredients:
4 salmon filets (6 oz each)
1/2 cup orange juice
1/2 cup balsamic vinegar
2 rosemary sprigs
2 tablespoons honey
2 tablespoons butter
side item of your choice

preheat oven to 200-250 degrees or so.

-combine orange juice, balsamic, honey and rosemary to small mixing bowl

-place salmon on cutting board skin down
-oil, salt and pepper
-heat skillet on medium/high heat, heat 1 tablespoon olive oil
-place salmon in skillet flesh side down
-let cook until golden brown sear
-flip over and place in oven

-place balsamic mixture to a cold saute pan
-bring to a boil
-boil until thicker, remove rosemary
-add butter, let boil 1-2 minutes

-remove salmon from oven
-place on salad greens
-spoon balsamic glaze over salmon
